I have the original recipe from almost 30 years ago (originally called German potato caserole) and this is a lot easier to make but I still prefer the older version, when I have the time to make it. Green potatoes do contain a form of toxin, but you are unlikely to ingest enough of it to do you any harm. Plus I’d much rather have healthy stable blood sugar than a bowl of pasta any day. In addition, do not store potatoes near onions, as the gases that they each emit will cause the degradation of one another.
